These Amaretto Poached Pears are such a low effort but fancy looking, delicious dessert. They are a perfect fit for the cozy / festive season. All you need for this 20 minutes dessert is pears, amaretto, sugar, ice cream and flaked almonds. I promise you that if you like amaretto, you will love these pears!
Preparation time: 20 minutes
Serves 4
Ingredients
4 pears
350 ml amaretto
3 tbsp brown sugar
4 scoops vanilla ice cream
4 tbsp almonds
Method
Peel 4 pears, then gently remove the core from the bottom with a paring knife. Don’t remove the stalk.
Add 350 ml amaretto and 3 tbsp brown sugar to a saucepan large enough for all pears to fit. Bring the amaretto to a boil, and give it a stir so the sugar and amaretto are well combined. Lower the heat to a simmer, add the pears, cover the saucepan with a lid, and let them cook for 15 minutes. Turn the pears a few times throughout the cooking process so they absorb the amaretto evenly.
Remove the pears and set them aside. Bring the amaretto back to a boil leaving the saucepan uncovered. Let the amaretto cook for about 5 more minutes, or until the liquid has reduced and turned into a thicker consistency.
In the meantime: Add 4 tbsp flaked almonds to a pan, and heat to medium heat. Stay close by to make sure that the almonds don’t burn. Move the almonds around with a wooden spoon as they start browning. Take the pan off the heat when the first almonds start turning medium-brown as the browning process will continue after due to the remaining heat in the pan.
To serve the pears: Place one pear in the middle of each plate, add a scoop of vanilla ice cream next to each of them, drizzle all with the reduced amaretto sauce, and sprinkle 1 tbsp of flaked almonds on each of the ice cream scoops.
Enjoy!
