Cherry Chocolate Cake with Rum Cream

This cherry chocolate cake contains a really small amount of butter in comparison to your usual cake but the yoghurt and cherries make it nice and juicy. Check out the video below to see all the steps.

Ingredients

  • 300g flour

  • 150g sugar

  • 2 eggs

  • 200g yoghurt

  • 1 can of cherries

  • 100g dark chocolate

  • 50g dark chocolate for the glaze

  • 100 g melted butter & butter for greasing the baking tray

  • 2 1/2 tbsp baking powder

  • 1 tsp vanilla extract

  • pinch of salt


For the rum cream:

  • 200g double cream

  • 2 tbsp sugar

  • 2 tbsp rum


Method

  1. With a hand mixer blend eggs, yoghurt, sugar and vanilla extract for 1 minute.

  2. Chop chocolate into small pieces and drain cherries through a sieve.

  3. In a second bowl stir flour, baking powder and salt.

  4. Add chocolate and cherries to the flour and mix under with a spoon.

  5. Melt butter and stir it into your first bowl then mix all ingredients together.

  6. Grease a cake pan with butter and add the cake dough.

  7. Bake on 175 degrees for 1 hour.

  8. When the cake has cooled down, glaze the cake with 50g dark melted chocolate.

  9. Serve with rum cream: In a bowl mix sugar, rum and double cream with a hand mixer until whipped.
