Coconut Macaroons (Kokosmakronen)

Here comes another traditional German Christmas cookie recipe. Did you know that there is a specific expression for Christmas cookies in Germany? They are called “Plätzchen” [ˈplɛt͡sçən] and there is a wide range of different ones, coming in all flavors and shapes. These Plätzchen are Coconut Macaroons (or in German: Koskosmakronen). They mainly consist of egg white, coconut and sugar and are very simple and quick to prepare. In the traditional version the macaroons are not dipped into chocolate but I love the combination of coconut and chocolate and think that they taste even better this way.

Ingredients
20 cookies

  • 2 egg whites

  • 100 g desiccated coconut

  • 70 g sugar

  • 1/2 tsp vanilla extract

  • 2 tbsp lime juice

  • 100 g dark chocolate

  • pinch of salt

Method

  1. Preheat the oven to 170 °C.

  2. In a medium-sized mixing bowl and using a hand mixer, beat 2 egg whites with a pinch of salt until fully stiffened.

  3. Mix in 70 g sugar, 1/2 tsp vanilla extract, and 2 tbsp lime juice.

  4. Pour in 100 g desiccated coconut and mix under with a spoon until well combined.

  5. Place a sheet of baking paper on a baking tray. Now, place teaspoon-sized blobs on the tray. Leaving about a centimetre of space between them as they will expand throughout the baking process.

  6. Bake the coconut macaroons for around 12 minutes until they start browning.

  7. Set them aside to cool down.

  8. Melt 100 g dark chocolate (either in the microwave or by filling a saucepan with water and placing a bowl with the chocolate inside. Make sure you stir frequently until fully melted).

  9. Dip the bottom of the coconut macaroons into the chocolate then set aside to cool down.

  10. Store the coconut macaroon in an air-tight container to keep them fresh and moist for as long as possible(chances are very high though that they’ll be gone fairly quickly).
