Creamy Salmon-Spinach Tortellini
A very simple and so delicious creamy salmon and spinach tortellini recipe. First, the salmon is baked in creamy spinach to perfect tenderness, then combined with fresh tortellini, some more cream, seasoned extra pepper and topped up with roasted pine nuts.

300 g fresh tortellini
2 salmon filets
260 g spinach
1 white onion
2 garlic cloves
180 ml double cream
6 tbsp roasted pine nuts
olive oil
1/4 tsp nutmeg
salt & pepper
Method
Preheat oven to 180 °C.
Peel and finely dice 1 onion and 2 garlic cloves.
Heat 2 tbsp olive oil to medium heat in a large frying pan.
Add onion, garlic, 1 tsp salt and a generous amount of pepper. Fry for a few minutes until the onions have softened.
Add 260 g spinach and gently fry for about 5 minutes until it has shrunk and released most liquid. Stir occasionally.
Lower the heat and stir in 80 ml double cream and about 1/4 tsp nutmeg. You can grate the nutmeg by using a fine cheese grater. Add more salt and pepper if necessary.
Transfer all to a small baking dish. Nestle 2 salmon fillets into the spinach. Drizzle each fillet with 1/2 tbsp olive oil and some extra salt and pepper.
Bake for 18-20 minutes. You can check if the salmon is all cooked through by cutting into the thickest part of the salmon. The flesh should not be pinkish anymore.
About 5 minutes before taking the salmon out of the oven, bring some water to a boil for the tortellini. Add a generous amount of salt and cook tortellini for about 3-4 minutes. Drain the water, using a sieve.
Use a wooden spoon to break the salmon fillets into smaller chunks. Transfer salmon-spinach and tortellini to the large frying pan that you used before. Heat pan to low heat, then gently stir in 100 ml double cream. Keep on a low simmer for 3-4 minutes. Add more salt and pepper to taste if needed.
Divide tortellini into two plates and garnish with 6 tbsp roasted pine nuts. To roast the pine nuts, simply bring a pan to medium heat and roast pine nuts for about 2 minutes without any oil. Take them off the heat as soon as they start browning.
