Honey-Mustard Glazed Salmon on Creamy Mash with Leeks
This is a very simple, quick, healthy, and incredibly tasty salmon recipe. After glazing the salmon with the honey-mustard sauce it only needs 18-20 minutes in the oven. In the meantime, you cook fry the leeks and cook the potatoes for the mash. Last but not least the secret to getting your mash to a very creamy consistency is using a blender.
Ingredients

2 salmon filets
3 leeks
700 g potatoes
60 ml milk
1 tbsp butter
1 tbsp runny honey
2 tbsp lemon juice
2 tbsp grainy mustard
olive oil
salt & pepper
Method
Preheat oven to 180 °C.
Bring a large saucepan of water to a boil. Peel 700 g potatoes, then cook for about 15 mins or until tender.
Whilst the potatoes are cooking, prepare the honey-mustard glaze for the salmon by combining 2 tbsp grainy mustard, 2 tbsp lemon juice, 1 tbsp honey, and 1 tbsp olive oil,
Place 2 salmon fillets in a baking tin and brush them with half of the sauce. Place the salmon on the middle oven rack and bake for 18-20 minutes.
When the potatoes are cooked, transfer them to a colander, drain the water, then place them in a mixing bowl. Mash the potatoes lightly, then add 1 tbsp butter, 50 ml milk, 1.5 tsp salt, 1/2 tsp pepper. Use a blender to puree the potatoes to the creaminess you desire. Add more milk if necessary and salt and pepper to taste.
Finely chop up 3 leeks, place them in a colander, and thoroughly rinse under cold water. Heat 2 tbsp olive oil to medium heat in a large frying pan, then add the leeks and 1.5 tsp salt. Fry until leeks have softened.
To serve, split the mash between two plates, then add leeks and lastly place the salmon fillets on top, and drizzle with the remaining sauce.
