Pear & Goat’s Cheese Puff Pastry Tarts
Ingredients
For 6 tarts
1 puff pastry roll
2 pears
1.5 roll of goat’s cheese (225 g)
10 tbsp sour cream
2 tbsp chopped fresh oregano plus a few more springs for garnish
handful of walnuts
honey
butter
salt & pepper
Method
Preheat the oven to 220 °C.
Roll out 1 puff pastry sheet, then cut it into six evenly sized rectangles. Roll up the sides.
Combine 10 tbsp sour cream with 2 tbsp fresh chopped oregano, and salt and pepper to taste.
Wash 2 pears, then use a sharp knife to cut them into thin slices, then halve the slices.. Remove the core where necessary.
Cut 1.5 roll of goat’s cheese into thick slices. Cut 1/3 of the slices into smaller chunks.
Evenly scatter the sour cream, followed by the goat’s cheese slices, then the pear slices and finally the goats cheese chunks across the tarts.
Melt a big knob of butter, then brush the sides of the tarts with the butter.
Bake the tarts for about 25 minutes or until they are golden brown.
Whilst the tarts are in the oven, bring a small pan to medium-high heat, melt a knob of butter, add a handful of walnuts, and fry them for 30 seconds. Add 2 tbsp honey. Caramelise the walnuts for about a minute whilst stirring regularly.
Evenly spread the walnuts on the tarts, add a few springs of fresh oregano and drizzle them with honey.
