Pret a Manger’s Five Berry Bowl
Pret a Manger’s Five Berry Bowl is a classic in their breakfast section: Greek yoghurt covert with pureed forest berries, topped with granola. Such a light and refreshing breakfast or snack and incredibly easy to replicate at home. Since the pureed berries last for at least three days in the fridge this is a great recipe for meal-prepping. The granola lasts for weeks if you store it in an airtight jar.

Ingredients
Serves 2-3
300 g greek yoghurt
250 g berry mix (if frozen, they should be defrosted for easier blending)
2 tbsp agave syrup
To make the granola topping:
150 g rolled oats
30 g coconut oil
4 tbsp honey
2 tbsp pumpkin seeds
2 tbsp raisings
Method
To prepare the granola topping:
Preheat the oven to 180 °C.
Melt 30 g coconut oil and 4 tbsp honey. You can do so by placing the bowl into the oven or microwave. Make sure the bowl is heat-proof.
Add 150 g rolled oats and 2 tbsp pumpkin seeds to a large mixing bowl. Pour in melted coconut oil and honey and mix with a spoon until well combined.
Lay baking paper out on an oven tray, then pour the oat mix on the tray and gently press it down.
Bake for 20 minutes on the middle oven rack. Move the oats around halfway so they brown evenly. Add 2 tbsp raisins and bake for 5 more minutes. Let the granola cool down.
To prepare the berry puree:
Place 200 g berries in a blender, add 2 tbsp agave syrup and blend until an even puree comes together.
Split 250 g greek yoghurt between bowls. Cover the yoghurt with berry puree. Top up with crunchy granola.
Enjoy!
