Quinoa Stir Fry with Veggies and Prawns
This quinoa stir fry with veggies and prawns is packed with lots of nutrition and a delicious, healthy and colourful meal which is quickly prepared. It is also the ideal dish that can be meal prepped and tastes great cold as well.

Ingredients
Serves 3
150 g quinoa
200 g king prawns
300 g champions or chestnut mushrooms
200 g tender stem broccoli
1 courgette
1/2 red onion
3 garlic cloves
1 lemon + more for serving
1 vegetable broth cube
salt
vegetable oil
Method
In preparation:
Peel and finely chop 1/2 onion.
Peel 3 garlic cloves.
Wash 1 courgette, cut off the ends, halve lengthwise and chop into slices.
Wash 200 g tender stem broccoli and cut into about 5 cm long pieces
Cut 300 g mushrooms into slices.
To cook the quinoa: Rinse 150 g quinoa in a fine sieve.
1. In a small saucepan, bring 300 ml water with 1 vegetable broth cube to a boil, add quinoa, stir, and then reduce heat to a very low simmer. Cover the saucepan with a lid and cook quinoa for 10-15 minutes, or until all the water is absorbed. Take the lid off and fluff quinoa with a fork so any residual steam can escape.
2. Whilst the quinoa is cooking:
Bring a large frying pan to medium-high heat. Add a splash of olive oil and add the mushrooms along with 1/2 tsp salt. Fry for about 5-8 minutes until most liquid has evaporated. Stir frequently. Transfer mushrooms to a plate.
Add more olive oil to the pan, fry the onion for a minute then add the courgette. Fry for about 8-10 minutes whilst stirring regularly until the courgette has softened and lightly browned.
Add the broccoli and the mushrooms for another 5 minutes and reduce to lower heat.
3. Whilst the veggies are finishing off:
Bring a splash of vegetable oil to high heat in a small frying pan, press in the 3 garlic cloves for 30 seconds. Add 200 g king prawns and fry for 2 more minutes from each side.
4. Combining it all:
Add the quinoa and the prawns to the vegetables. Squeeze in the juice of 1 lemon and stir until combined. Add salt and pepper to taste and serve with more lemon
