Sweet Potato-Quinoa Veggie Burger

I came up with this recipe because I was tired of having vegetarian burgers with patties that consisted of y soy, mushrooms or beans! It is so simple to make a veggie burger that contains none of those ingredients and tastes even better!

I have added mashed avocado, cheddar, caramelised onions and tomato to the burger but you can of course add your favourite toppings and sauces.

Ingredients
For 6 burgers
Preparation time: 50 mins

For the quinoa patties:

  • 150 g white quinoa

  • 350 ml water

  • 1 vegetable cube

  • 2 sweet potatoes

  • 150 g broccoli (about 1/2 broccoli)

  • 2 tbsp sweet corn (canned)

  • 2 eggs

  • 60 g cheese like cheddar (grated)

  • 4 tbsp flour

  • 1/2 red onion (finely chopped)

  • olive oil

  • salt & pepper

For the burger:

  • 6 burger buns

  • 6 slices of cheese (e.g. cheddar)

  • 1 large tomato

  • 1 large red onion

  • 3 avocados

  • ketchup

  • 1 tbsp sugar

  • 2 tbsp olive oil

  • salt & pepper

Method

To prepare the quinoa patties:

  1. Preheat oven to 200 °C.

  2. Wash 2 sweet potatoes and cut into quarters. Place them on a baking tray, brush with 2 tbsp olive oil and sprinkle with 1/4 tsp salt. Bake for 30 minutes until softened. Let them cool down.

  3. In the meantime: Bring 350 ml water, 1 vegetable cube and 150 g white quinoa to a boil, then turn the temperature down to a simmer and cook uncovered for 15 minutes until all liquid has absorbed. Let the quinoa cool down.

  4. In a separate saucepan, bring water to a boil. Cut 150 g broccoli into smaller pieces and cook for about 6 minutes or until broccoli has softened but still has some bite to it.

  5. When the sweet potatoes have cooled down, take the skins off and mash flesh with a fork.

  6. In a large mixing bowl, combine quinoa, sweet potato, broccoli, 2 tbsp sweet corn, 1/2 red onion (finely chopped), 60 g grated cheese, 2 eggs, 4 tbsp flour. Add salt & pepper to taste. The mixture should be firm enough to form patties - if not, add some more flour until desired texture comes together.

In preparation for the burgers:

  1. Cut 1 large tomato into slices.

  2. Mash 3 avocados and add a pinch of salt & pepper.

  3. For the caramelized red onions: Cut 1 red onion into slices. Heat up 2 tbsp olive oil in a frying pan. Fry onion until nicely softened and mix in 1 tbsp sugar. Fry for another 1-2 minutes.

Frying the patties and assembling the burgers:

  1. Form six same sized patties. Heat 2 tbsp olive oil in a large frying pan to medium-high heat and fry three patties at a time for about 5 minutes from each side or until nicely golden.

  2. Toast 6 burger buns and add ketchup on each bottom, followed by adding the quinoa patties, cheese slice, tomato slice and then caramelised onion. Finish off with spreading the top buns with mashed avocado.
