Sticky Sesame Udon Noodles with King Prawns
Udon Noodles are thick Japanese noodles made of wheat flour. They are often served in a soup but you can also add them to stir-fries. They are real comfort food and the gooey texture is amazing. In this recipe, I have added king prawns, sugar snaps and sesame. The sauce is made of soy sauce, Teriyaki sauce and sesame oil. A really tasty dish, that is simple and quickly prepared.

600 g udon noodles
130 g king prawns
120 g shitake mushrooms
4 garlic cloves
100 g sugar snaps
4 tbsp sesame oil
3 tbsp soy sauce
1 tbsp teriyaki sauce
vegetable oil
sesame seeds for garnish
Method
Finely cut or mince 4 garlic cloves. Wash, then cut 120 g shitake mushrooms into thin slices.
Peel 130 g king prawns and slice the back open (from the neck 2/3 down to the tail).
In a frying pan, heat 2 tbsp vegetable oil with a generous amount of salt to high heat. Fry garlic for 30 seconds, then add prawns for 3-5 minutes (depending on their size). The prawns are done, when they have curled up and turned orange. Set them aside for later.
In case your prawns were already peeled and orange, this means that they have already been cooked in which case you don’t need to fry them longer than 3 minutes.Add 2 more tbsp of oil to the pan, then add mushrooms, sprinkle with 1/2 tsp salt and fry on medium heat for about 5 minutes or until all water has condensed.
Push the mushrooms to one side of the pan and add 2 tbsp sesame oil to the free part of the pan. Add 100 g sugar snaps and fry for another 4-5 minutes from both sides. Make sure that the side of the pan with the sugar snaps is where most of the heat reaches.
Take vegetables out of the pan and add 2 more tbsp sesame oil. Add 600 g udon noodles and fry for 2-3 minutes until they get golden-brown marks.
Now, return the vegetables and prawns and add 2 tbsp soy sauce and 1 tbsp teriyaki sauce. Stirr all well and let fry on low heat for 3 minutes.
Divide udon noodles into two plates or bowls and garnish with some sesame seeds.
