Runny Yolk Breakfast Bagel
This breakfast bagel with avocado and salmon is topped with a runny egg yolk and sprinkled with dill. Exactly what weekend brunch is made for.
Ingredients
For two bagels
2 sesame bagels
2 fresh egg yolks
1 ripe avocado
50 g smoked salmon
grainy mustard
cream cheese
fresh dill
butter
salt & pepper
Method
Halve 2 sesame bagels. Toast the bottoms.
Melt 2 tbsp of butter in a frying pan. Place the 2 top bagel halves in the frying pan.
Place 2 egg yolks into the bagel holes (one per bagel). Fry for about 4 minutes or until the yolks have hardened a little.
Mash 1 avocado and season with salt & pepper to taste.
Spread cream cheese over the bagel bottoms, followed by grainy mustard.
Add half of the 50 g salmon to each bagel bottom, sprinkle with chopped dill, followed by the mashed avocado and more dill.
Finally, place the bagel tops onto the bagels and finish with more dill.
