Blueberry Energy Bars
These homemade blueberry energy bars are the perfect blend of delicious and nutritious! Packed with oats, ripe bananas, cashew nuts, and a hint of dark chocolate, theyβre great for a quick breakfast or a post-workout snack. ππ«πͺ
Ingredients:
For 7 bars
Per bar: kcal: 164, 7 g protein
100 g oats ( 1 1/4 cups)
3 ripe bananas (360 g / 12.7 oz)
50 ml oat milk (1/4 cup)
50 g frozen blueberries (1/3 cup)
30 g chocolate protein powder (1/4 cup)
30 g cashew nuts (1/4 cup), chopped
20 g dark chocolate (1/8 cup), melted
Method:
Preheat your oven to 180Β°C (350Β°F).
In a bowl, mash 3 bananas with a fork. Chop 30 g cashew nuts.
Combine the mashed bananas, chopped nuts, 50 g frozen blueberries, 30 g protein powder, 50 ml oat milk, and oats. Mix until an even mixture forms.
Line a small oven dish (20 x 15 cm / 8 x 6 inches) with baking paper. Fill it with the oat mixture and press down firmly with a fork.
Place the oven dish on the middle rack and bake for about 25 minutes or until lightly golden. Let it cool completely.
Once the bars have cooled, drizzle them with 20 g melted dark chocolate. You can melt the chocolate either in a small saucepan over low heat or in the microwave, stirring constantly to prevent burning.
Cut the oat mixture into evenly-sized bars. Store the bars in an airtight container in the fridge to keep them fresh. They will stay juicy for at least one week.
