Peanut Butter Oat Cups
These Peanut Butter Oat Cups are the perfect snack for busy mornings, a pre- or post-gym energy boost, or when you're craving something sweet without added sugars. Made with just 5 simple ingredients—bananas, oats, protein powder, peanut butter, and dark chocolate—these cups are not only delicious but also nutritious.
They're incredibly easy to prepare: all you need is a muffin mould, and they’re ready in no time. Store them in an airtight container in the fridge, where they'll stay fresh for at least a week—if you can resist them for that long!
Ingredients
For 12 cups
Per cup: kcal 125, protein: 5.5 g, fat: 5.5 g
2 bananas
120 g oats (1 1/2 cups)
40 g protein powder (1/3 cup)
60 g peanut butter (1/4 cup)
60 g dark chocolate (2 oz)
sea salt flakes
Method
Preheat your oven to 180°C (350°F).
In a bowl, mash 2 bananas thoroughly. Add 120 g oats and 40 g protein powder, and mix until well combined.
Evenly distribute the oat mixture into 12 muffin moulds, pressing it down firmly with a spoon.
Bake the mixture on the middle rack of the oven for 15 minutes. Once done, let them cool down.
Melt 60 g peanut butter over low heat. Once melted, spread it evenly over the cooled oat bases in the muffin moulds. Place the moulds in the freezer for 15 minutes.
Melt 60 g dark chocolate over low heat. Pour an even amount over the peanut butter layer in each mould, ensuring it is fully covered. Sprinkle sea salt flakes on top.
Return the moulds to the freezer for an additional 5 minutes.
Once set, remove from the freezer and enjoy!
The energy bars are best stored in an airtight container in the fridge.
