Cherry Tomato Tart with Burrata
This savory cherry tomato tart is made with just a few simple ingredients but delivers incredible flavour. Cherry tomatoes, puff pastry, burrata, and balsamic glaze come together to create a crispy, caramelized tart with a creamy finish.
The tomatoes are roasted under a layer of puff pastry, allowing them to soften and develop a rich, sweet flavour. Once flipped, the golden crust becomes the base for the juicy, caramelized tomatoes. Topped with creamy burrata and a drizzle of balsamic glaze, this tart is a quick and delicious appetizer or light meal.
Ingredients:
For 2 small tarts
Puff pastry
100g cherry tomatoes
50g burrata
Balsamic glaze
Olive oil
Salt
Method:
Preheat the oven to 180°C (356°F).
Prepare the Tomatoes:
Halve the 100g cherry tomatoes.
Shape the Pastry:
Roll out the puff pastry and use a bowl to cut out two circles for the tarts.
Assemble the Tart Base:
Drizzle olive oil onto a baking sheet in two circles, the same size as the tarts.
Sprinkle a pinch of salt over the oil.
Arrange the tomato halves, cut side down, in a circular pattern on the olive oil, leaving space for the rim.
Drizzle the tomatoes with balsamic glaze.
Add the Pastry:
Place the puff pastry circles over the tomatoes.
Press down the edges and use a fork to seal the sides.
Poke a few holes in the pastry to allow steam to escape.
Brush the top with olive oil.
Bake the Tarts:
Bake for 15 minutes or until the pastry is golden and crisp.
Flip & Serve:
Carefully turn the tarts over and remove the baking paper.
Top each tart with 25g of burrata.
Drizzle with more balsamic glaze before serving.
