Blueberry Oat Energy Bars

These Blueberry Oat Bars are a simple-to-make snack that’s perfect for breakfast or an energy boost during the day. Made with just four ingredients and no added sugar, these bars are both nutritious and satisfying.

The naturally sweet bananas sweeten the bars and bind the oats together, while the blueberries provide a burst of flavour and antioxidants.

Easy to make and full of fiber and healthy carbs, these bars are a great addition to your weekly meal prep.

Ingredients:

  • 1.5 bananas

  • 240g (3 cups) oats

  • 360ml (1.5 cups) oat milk

  • 70g (1/2 cup) blueberries

  • Small oven dish

Method:

  1. Preheat the Oven:

    • Preheat the oven to 180°C (356°F).

  2. Prepare the Oats:

    1. Mash 1.5 bananas in a bowl until smooth.

    2. Add 240g oats and 360ml oat milk. Mix well until a sticky texture forms. Add more milk or oats if needed to reach your desired consistency.

    3. Press half of the oat mixture into a small oven dish to form the base.

    4. In a small pot, cook the 70g blueberries with a dash of water on low heat for 5 minutes (add more water if it desolves fully throughout the process). Mash the blueberries lightly to help release more liquid.

    5. Spread the cooked blueberries evenly over the oats.

    6. Cover with the remaining oat mixture.

    7. Place the dish in the middle oven rack and bake for about 25 minutes or until the oats start to lightly golden.

    8. Let the oats cool before cutting them into bars.
