Homemade Crunchy Nut Granola with Maple Syrup
Granola is great in yoghurt, milk or smoothie bowls. But the supermarket versions contain insane amounts of sugar which is why I am making my own granola these days. Besides knowing what goes in, I also like the freedom to adding whatever nuts, grains or berries I like. This crunchy nut granola contains almonds, cashews, sunflower seeds and raisins - and most importantly maple syrup which ads beautiful flavour. Make sure, you don’t add the raisins in the beginning as they may burn if they stay in the oven for too long.
Ingredients
Preparation time: 25 minutes
300 g glutenfree oats
60 g flaked almonds
40 g whole almond nuts
60 g cashew nuts
40 g sunflower seeds
60 g raisins
50 g coconut oil
100 ml maple syrup
2 tbsp honey
1 tsp salt
Method
Preheat oven to 180 °C.
Add 300 g oats, 60 g cashew nuts, 60 g flaked almonds, 40 g whole almonds, 40 g sunflower seeds and 1 tsp salt to a large mixing bowl.
Melt 50 g coconut oil and add to the bowl with 100 ml maple syrup and 2 tbsp honey. Mix well.
Spread half of the mixture on a baking tray with baking paper and press down with a spoon.
Bake for 15 minutes, then add 60 g raisins and move the granola around so it gets nice and golden from all sides. Bake for 5 more minutes.
Take the baking sheet off the tray and let cool down. Repeat the baking process with the other half of the granola.
