Feta, Cherry & Rosemary Puff Pastries

I love puff pastries because with minimal time and effort you will get an amazing result. I often make them when I have friends over for brunch or wine and nibbles. Usually I serve 2-3 different types - sky is the limit when it comes to getting creative with their shapes and fillings. The tangy taste of feta, sweet and sour cherry flavour and aromatic rosemary in this filling works incredibly well if you like the combination of sweet and savoury.

Ingredients

  • 1 roll puff pastry

  • 100 g feta

  • 100 g cherries (you can use frozen or tinned ones too)

  • 2 rosemary stems

  • 1-2 egg yolk

Method

  1. Roll out the puff pastry dough and cut it into 10 even sized rectangles.

  2. Crumple some feta on each piece.

  3. Add 2-3 cherries onto each piece and sprinkle some rosemary on top.

  4. Fold the puff pastries. I brought the longer sides together (see video below). You can shape them as you prefer though.

  5. Brush some egg yolk on each puff pastry and bake on 175 degrees for 15-20 minutes until golden.
