Red Wine, Chocolate & Pecan Cake
This red wine, chocolate & pecan cake is one of my favourites to make during the cozy seasons. It is super moist yet due to the chocolate chunks and nuts doesn’t lack texture. Also the red wine adds a subtle boozy flavour and the cinnamon a touch of Christmas.
Ingredients
250 g butter (at room temperature)
200 g sugar
4 eggs
250 g flour
1 tsp vanilla extract
1 tbsp cinnamon
1 tbsp cocoa powder
4 tsp baking powder
125 ml red wine
80 g chopped dark chocolate
50 g raisins
50 g chopped pecan nuts (or walnuts)
pinch of salt
For the frosting:
150 g powdered sugar
4 tbsp red wine
Method
Preheat oven to 175 degrees.
Mix 250 g butter (at room temperature), 200 g sugar, 1 tsp vanilla extract, 1 tbsp cinnamon and a pinch of salt with your hand mixer for 3 minutes.
Add 4 eggs and continue mixing until creamy.
Add 250 g flour, 4 tsp baking powder, 1 tbsp cocoa powder and 125 ml wine and mix under with a spatular until dough comes together.
Add 80 g chopped dark chocolate, 50 g chopped pecan nuts (or walnuts) and 50 g raisins to the dough and mix under.
Grease your cake tin with some butter and fill with the dough.
Bake cake on the second rack from the bottom on 175 degrees for about 45 minutes.
When the cake has cooled down, mix 150 g powdered sugar and 4 tbsp of red wine well and glaze the cake with it. You can decorate the cake with nuts or raisins.
