Honey Baked Goat’s Cheese Salad with Raspberry Dressing
This salad is such a beautiful dish for summer. The flavour of the honey drizzled and baked goat’s cheese in combination with the raspberry dressing is heavenish.
Ingredients
Serves 2
150g of firm goat’s cheese roll
150g salad greens
½ cucumber
100g raspberries
3 tbsp honey
3 tbsp flaked almonds
60ml Newman’s Own French Salad Dressing (or alternatively you can make your own French dressing by combining 1 tsp mustard, 2 tbsp white wine vinegar, 6 tbsp olive oil, and 1/2 tsp sugar)
Method
Preheat the Oven: Set your oven to 180°C.
Prepare the Goat’s Cheese: Slice the goat’s cheese roll into six even pieces.
Bake the Cheese: Place the cheese slices, cut side up, on a baking tray lined with baking paper. Drizzle evenly with 3 tbsp honey and sprinkle with 3 tbsp flaked almonds. Bake in the middle rack of the oven for about 10 minutes, or until the almonds are lightly browned.
Assemble the Salad: Rinse and slice the cucumber. Divide the salad greens, cucumber slices, and half of the raspberries (50g) between two plates.
Make the Raspberry Dressing: In a blender, combine the remaining raspberries (50g) with 60ml Newman’s Own French Salad Dressing until smooth.
Serve: Place three slices of baked goat’s cheese on each salad. Drizzle with the raspberry dressing.
