Banana-Choc Energy Bars

Here's another quick & easy energy bar recipe for you! 🍌🍫 These Banana Choc Bars take just 10 minutes to prepare and 20 minutes in the oven. For those of you who don’t like raisins: Check out my Breakfast Bar recipe where I use dates instead.

Ingredients
For 7 bars
Preparation time: 10 minutes
Baking time: 20 minutes

  • 50g cashew nuts

  • 150g oats

  • 3 ripe bananas

  • 50g raisins

  • 20g dark chocolate

You also need:

  • small oven dish (20 x 15 cm)

  • small mixing bowl

  • fork

  • sharp knife

Method

  1. Preheat the oven to 180 Β°C.

  2. Soak 50g raisins in warm water.

  1. Mash 3 bananas, using a fork. Chop 50g cashew nuts.

  2. In a mixing bowl, combine the bananas, cashew nuts and rinsed raisins with 150g oats.

  3. Line a small oven dish (20 x 15 cm) with baking paper.

  4. Add the oat mixture to the lined oven dish and press it down with a fork.

  5. Place the oven dish on the middle rack of the oven and bake for about 20 minutes, or until lightly golden. Let it cool down.

  6. Once the bars have cooled, drizzle them with 20g of melted dark chocolate. (You can melt the chocolate on low heat in a small saucepan or in the microwave. In either case, make sure to stir the chocolate continuously to prevent burning.)

  7. Cut the oat bar into seven evenly-sized smaller bars. Store the bars in an airtight container in a cool place to keep them moist. They will stay fresh for at least one week.
