Grilled Nectarine, Burrata & Prosciutto Summer Salad
This Grilled Nectarine, Burrata & Prosciutto Salad is a more summery and colourful version of the classic Italian tomato, mozzarella & basil salad. You can either use nectarines or peaches - both work great. If your nectarines or peaches are not ripe enough, brush them with a little bit of honey before you place them on the bbq.
Ingredients
Serves 3-4 people as a starter/sharing dish
Preparation time: 15 minutes
3 ripe nectarines
1 burrata
large handful rocket
8 basil leafs
3 slices of prosciutto
black pepper
For the dressing:
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp honey
1/4 tsp salt
Method
Cut 3 nectarines into slices. Place them on the bbq with the cut side facing downwards. Leave them on the bbq for about 5-10 minutes (the time depends on how hot your coal is). They are ready to be taken off when you see grill marks.
To prepare the dressing, combine 2 tbsp olive oil, 2 tbsp balsamic vinegar, 1 tsp honey and 1/4 tsp salt.
Spread a large handful of rocket on a large plate or serving platter. Drizzle half of the dressing over the rocket.
Pull 3 slices of prosciutto into stripes and pull 1 burrata ball into chunks. Add all, including the grilled nectarines, decoratively to the plate.
Garnish with 8 basil leaves and drizzle with the remaining dressing. Optionally add some freshly cracked black pepper to taste.
