Pear, Goat Cheese & Walnut Salad

This pear, goat cheese & walnut salad is a great first course. It can be followed with meat as well as a vegetarian dish. The salad is really light and perfectly combines sweet and savoury flavours.

Ingredients
Serves 2
Preparation time: 15 minutes

  • 1 pear

  • 80 g goat cheese

  • 60 g arugula

  • a small handful of walnuts

For the dressing:

  • 1 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1/2 tsp salt

  • 1 tsp honey

Method

  1. Wash 1 pear. Use a sharp knife to cut it into thin slices.

  2. On two plates: Position the pear slices like a star with the narrower ends meeting in the middle.

  3. Spread 60 g arugula between the two plates.

  4. Mix the dressing by combining 1 tbsp olive oil, 2 tbsp balsamic vinegar, 1/2 tsp salt, 1 tsp honey and drizzle over the arugula.

  5. Pull 80 g goat cheese into small chunks and spread over the salad. Garnish with a small hand of walnuts.
