Pan Fried Gnocchi with Sun-Dried Tomatoes

Gnocchi prepared differently: Fried gnocchi are a delicious alternative to the cooked classic. This recipe is also great if you have leftover gnocchi from the day before. The frying gives the gnocchi a firmer consistency and due to them being fried with sun-dried tomatoes and their oil, as well as cocktail tomatoes, olives and basil give them a lovely Mediterranean flavour. A simple and quick recipe that will work for anyone.

Ingredients

Serves 2

  • 400 g gnocchi

  • 90 g sun-dried tomatoes (including the oil)

  • 120 g cherry tomatoes

  • 50 g fresh spinach

  • 30 g sliced black olives

  • 1/2 white onion

  • 2 garlic cloves

  • large handful chopped basil

  • 20 g pine nuts

  • salt & pepper

  • 5 tbsp grated parmesan cheese (optionally more for the table)

Method

  1. Bring about 800 ml of water to a boil in a large saucepan. Add 2 tsp salt and 400 g gnocchi. Cook gnocchi for 3 minutes, then drain and set aside.

  2. Peel and finely dice 1/2 white onion and 2 garlic cloves. Chop 90 g sun-dried tomatoes (keep oil for later), 30 g black olives and a large handful of basil. Quarter 120 g cherry tomatoes.

  3. Bring a large frying pan to medium-high heat, then add 3 tbsp of the sundried tomato oil. Add onion and garlic and fry for about 2 minutes until softened.

  4. Add sun-dried tomatoes and gnocchi and fry on medium-high heat for about 6-8 minutes from each side until the gnocchi become golden in colour.

  5. In the meantime roast the pine nuts: Heat a small frying pan to medium-low heat and add 20 g pine nuts. Stay close to the pan as pine nuts burn quickly. Make sure to move them around frequently and take them out of the pan as soon as they turn golden brown. Set aside to cool.

  6. Add 50 g spinach and 30 g sliced black olives to the gnocchi until the spinach has wilted. Season with salt and pepper to taste.

  7. Lastly, roughly chop a large handful basil and add to the pan along with the pine nuts.

  8. Divide the gnocchi between two plates and garnish with 5 tbsp parmesan. Serve with more parmesan for the table.
