Chewy Marzipan-Chocolate Bites
These chewy chocolate dipped almond-marzipan biscuits are very typical in Germany around Christmas. Usually they are crescent shaped but I really like them as smaller bites. Marzipan is a common christmassy ingredient in Germany and mainly consists of finely ground almonds (minimum 48%) and sugar (max. 35%). Make sure that the marzipan has no less than 48% almonds (e.g. from Fr. Oetker). Many suppliers sell “fake” marzipan which mostly consists of sugar and will ruin the outcome of your biscuits.
Ingredients
Makes 30 cookies
400 g natural white marzipan (min. 48% almond)
200 g powdered sugar
1 egg white
300 g almond flakes
100 g chocolate (either dark or 50/50 dark and milk chocolate)
1 tsp almond extract
Method
Preheat oven to 180 degrees.
Grate 400 g marzipan and place in a medium sized bowl. Add 200 g powdered sugar, 1 egg white and 1 tsp almond extract.
Use the dough hooks of your hand mixer and mix 2-3 mins until an even dough comes together. Make sure there are no marzipan chunks left in the dough.
Spread 150 g almond flakes on a baking tray with baking paper.
Fill the dough into a pastry bag (alternatively you can use a freezing bag> Place dough into one corner and cut off the tip) and squeeze little ball shapes onto the tray.
Sprinkle the rest of the almond flakes on top and press onto the marzipan balls so they are evenly covered.
Bake on second rack from bottom for 15 minutes. Let cool down.
Melt 100 g chocolate and dip marzipan cookies half way in - let dry.
Best stored in an air tight container.
