Peanut Butter & Banana Baked Oats on the Go
If you're after a healthy, nutrient-packed breakfast that keeps you full for hours, try these Peanut Butter & Banana Baked Oats. Baking them in jars makes portioning simple and convenient—perfect for reheating at home or grabbing on the go for a quick breakfast or snack.
Ingredients
For 2 portions
(314 kcal, 10 g protein, 11 g fat)
80 g oats (⅔ cup)
180 ml oat milk (¾ cup)
2 bananas
4 tbsp peanut butter
6 tbsp flaked almonds
2 tbsp cocoa powder
1 tsp brown sugar ((optional, for caramelization)
2 jam/glass jars
Method
Preheat your oven to 180°C (350°F).
In a mixing bowl, mash 1 banana with a fork until smooth. Add 80 g oats, 3 tbsp flaked almonds, 2 tbsp cocoa powder, and 180 ml oat milk. The texture should be slightly runnier than porridge. Adjust with more oats for a firmer texture or more milk for a runnier texture if needed.
To assemble the oat jars, layer the ingredients as follows in your oven-safe jars:
Start by spooning in half of the oat mixture.
Add a few slices of the second banana on top.
Cover with 1 tbsp peanut butter.
Sprinkle with 1/2 tbsp flaked almonds.
Repeat the process again and optionally Sprinkle the final layer of sliced banana with 1/2 tsp of brown sugar. The sugar will melt and caramelize during baking, adding a sweet, crispy topping.
Place the jars on the middle oven rack and bake for 30 minutes, or until the oats are set and the bananas have caramelized on top.
Once baked, remove from the oven and allow to cool for a few minutes. You can enjoy it warm or store it in the fridge for up to 3-4 days for a quick, on-the-go breakfast.
