BBQ Chicken & Red Pepper Skewers

Ingredients
Serving 3
(450 kcal, 45g protein)

  • Chicken

    • 1450g (1lb) chicken breasts, cut into 1-inch (2.5 cm) cubes

    • 2 red bell peppers, cut into 2.5 cm (1-inch) pieces

    • 1 tablespoon olive oil

    • salt & pepper

  • Sauce:

    • 1 cup (240g) Greek yogurt

    • 2 tablespoons BBQ sauce

  • To Serve:

    • Pita bread, warmed

    • Drizzle of olive oil

Method

  1. In a bowl, toss chicken cubes with olive oil, salt, and pepper until evenly coated.

  2. Thread chicken and red pepper pieces onto skewers, alternating between them.

  3. Heat a grill or skillet over medium-high heat. Cook skewers for about 10-12 minutes, turning occasionally, until chicken is fully cooked.

  4. In a bowl, mix Greek yogurt with BBQ sauce until well combined.

  5. To serve, spread a few tablespoons of the yogurt sauce on each plate. Place cooked skewers on top. Drizzle with a little olive oil. Serve with warmed pita bread.
