BBQ Chicken & Red Pepper Skewers

Chicken
1450g (1lb) chicken breasts, cut into 1-inch (2.5 cm) cubes
2 red bell peppers, cut into 2.5 cm (1-inch) pieces
1 tablespoon olive oil
salt & pepper
Sauce:
1 cup (240g) Greek yogurt
2 tablespoons BBQ sauce
To Serve:
Pita bread, warmed
Drizzle of olive oil
Method
In a bowl, toss chicken cubes with olive oil, salt, and pepper until evenly coated.
Thread chicken and red pepper pieces onto skewers, alternating between them.
Heat a grill or skillet over medium-high heat. Cook skewers for about 10-12 minutes, turning occasionally, until chicken is fully cooked.
In a bowl, mix Greek yogurt with BBQ sauce until well combined.
To serve, spread a few tablespoons of the yogurt sauce on each plate. Place cooked skewers on top. Drizzle with a little olive oil. Serve with warmed pita bread.
